I have an interview on Friday. Hopefully it'll go well. It's with this Christian mission organization in Sylmar, CA. It seems like it's going to be a regular interview, they didn't ask me to bring my knife kit or anything. Wish me luck, I need a job. -_- I have 2 months left until I have to move.

Still looking for a job. I've filled out several applications, around the area I'm trying to move too. I'm hoping to get a call by the end of this month or mid October. We're trying to move into the new place by the end of October.

I'll be heading up to the school tomorrow. I have to file a leave of absence or I'll get kicked out of the program. I found out last week that I can't technically start my externship until the end of next week because of some awkward scheduling problem. *sighs* This also means I'm not sure I'll be able to start the externship. Finding a job and moving takes priority over the externship, unless I want to risk being homeless again. -_-

My grandmother crazy neighbor is complaining about me feeding the two cats outside. I did go up to her place and ask if there was anything I could do to minimize any problem I was causing if any, since she been watching every move I've made when outside feeding and caring for them and locking me out of the main hall way. So as soon as I begin talking to her she goes bat-shit and denies everything, then starts hootin' and hollering about how "I've got my nerves." At that point I wished her a good night and left. -_- She's crazy.

Fast forwarding to today, she apparently noted the landlord and has my grandparents afraid they're going to be evicted. I'm not sure if we're going to be able to move in time, so I'm contemplating taking them to a local no-kill rescue, where I know they'll be placed with cat-loving people, but I know the little one will be distressed if she and her bud were split up, but maybe they could find a home to take both in. I'd like to see if I could find a foster for them for the next two months, but that doesn't seem likely. I'm going explore all of my options. I want to keep these cats, but I don't want psycho-woman to do anything to them either.

*sighs* When it rains it pours.

It looks like I have my externship. All I have to do is get the paperwork signed to make it official. *dances* I'm going to be sticking it out at Ghalia Organic Desserts. It's unpaid, of course, but it'll be a great experience. They make awesome baked goodies. I look forward learning the ropes from them. I really love one of the flavor twists they put on traditional baked goods like cookies and brownies.

On another note, I'm still looking for a full-time job and I'm still apartment hunting. I look forward to finally being able to make my cats indoors only. I worry about them being inside, but my grandfather would kill them if I brought them in. It's just about time for another vet visit so he can check my kitty's skin. Everything's looking up at this point.

A few folks wanted the custard recopies, so here they are. Except the flan, it's very bland and I wouldn't recommend it. >.> You can substitute vanilla extract for the vanilla bean though I forget the ratios. I have to look for the chocoolate mousse recipes.

Scald: to cook liquid until it begins to smoke and bubble slightly around the edges of the pot.

Vanilla Ice Cream(makes 1 quart)

12 fl.oz Milk Whole

1/4 Vanilla Bean

5 1/2oz Granulated Sugar

5 each Egg yolks(large)

8 fl.oz. Cream

Production:
Scald milk w/ Vanilla and half of the sugar. Put the remaining sugar in a bowl w/ the yolks and mix together and temper the milk into the yolks. Put the content back on the stove and cook it until to nappe stage(it coats the back of a spoon. Cool and store it. It tastes better if you leave it in the fridge for 12 hours.

Pot De Creme Au Chocolate(yeilds about 12oz )

8 fl.oz Whole milk

3oz. Cream

4oz. Semi-sweet chocolate

2oz. Granulated Sugar

1 Large egg

2 Large egg yolks

Production:
Melt chocolate over water bath, scald milk and cream with some of the sugar, whisk eggs and sugar in separate container and temper in melted chocolate. Then temper in the scalded milk/cream into the chocolate mixture. Strain it through a chinois(any fine mesh/cheese cloth will do) and skim off the foam/bubbles on top of the mixture. Pour mixture into ramekins(or whatever you putting it in) and bake in a water bath(fill it about half way up to the pudding containers), and cover them with foil/parchment paper (if using foil poke holes in it, leave enough space so that it doesn't touch the top of the mixture). Bake at 300F - 325F until it it set in the middle. It should be jiggly around the outer regions and set in the middle. Let it stand at room temp for 10 minutes and chill over night for best results. Serve with whipped cream, preferably with out sugar, the pudding it sweet enough. If you can't get it commerticially, just whip some day old or two day old cream until it forms a medium peak.

Crem Brulee(makes 10 oz)

12 fl.oz Cream

1/2 each Vanilla Bean

2oz Granulated Sugar

4 each Large Egg Yolks

Plating/Garnish:

Turbinado
Sugar(granulated) as needed. Use a dry paper towel to dry the surface if needed. You want enough sugar so that you are barely able to see the custard underneath. Melted the sugar until it caramelizes. Amber is a good color to stop at, if you like a more bitter contrast with the sweet custard you can contunue cooking it. Melt the sugar quickly or the custard will melt.

Production:

Scald cream with vanilla bean and half of the sugar. Again whisk the sugar and yolks and temper in the cream. Strain it through a chinois/ mesh/cheese cloth. Skim off foam and bubbles. Pour mixture into a ceramic/heat resistant container(you're going to be torching/heating sugar on top of this) and cover(same as the Pot de Creme), bake at 300F - 325F until set in center. Cool for 10 mins and chill over night. Add Turbinado before serving.

I'm not sure if I mentioned before but we recently we've been caring for a two stray cats. One of them appeared to be pregnant also a little off balanced at time. We found a low cost vet to spay/neuter them. We thought they were both females, but it turns one was male. The pregnant female had a dead litter of 6 kittens inside her. I'm glad we got her there before she had any complications and the male turned out to be already neutered. The female's(who I'll refer to as BK from now on) wound is healing nicely, as a matter of fact I can hardly see where the incision is now. We just started both of them on Wellness Core(dry and wet) and they're looking much better now. We've decided to take them with us when we move. I'll try to get a picture of the other cat Delicious Kitty(my boyfriend chose his name, lol) I'm just glad she's doing much better.

Here is another picture from school. It was actually my final practical test for my meat and seafood fabrication class. We had to choose a protein, starch, and veggie from a basket. My picks were Red Snapper, Red Bliss Potatoes, and Yellow Squash. I pan fried the snapper, served it with roasted garlic and rosemary red bliss, and sauteed the yellow squash with butter and ginger. I think it turned out pretty well.

Here's a couple of pictures of the dishes that I've made since I purchased my new digital camera:

Fillet Minion w/ Ratatouille & Bordelaise Sauce. I didn't realize the ratatouille was still smoking.

Pork Chop w/ a rosemary, veal stock, and red wine pan reduction sauce.

We also had a bit of a buffet with the leftover meats we had left from Fabrication. It was awesome for our first Buffet-type set up.

Today we had a bit of an "Iron Chef" type challenge. We were divided into teams and had to create and appetizer and main dish featuring Squall and Sweetbreads. My team decided to make a sweetbread appetizer and squall entree. My team won the challenge with our sweetbread nuggets(lol) and deep fried squall.

I'm really having a great time, and getting to eat what we create is always a plus. I'm looking forward to completing the program and getting a job that I won't absolutely loath for once. I'll take more pictures since I have to make a portfolio and submit it with my resume for grading.

Episodes at Home

So, my sister is at it again. She brought two of her friends in the apartment when my grandparents weren't here. The only person that was around was my mother(who seems to be in her own little world some times), and she doesn't pay attention to her. My uncle just happen to come by and visit. He told my grandparents about this.

Now let me first off establish that my sister isn't allowed to have company in the house when my grandparents are home. What makes her think this is ok? Of course her mother just goes along with this, disobeying her own parent's rules and to top it all off they're playing my Wii. Now, If they had gotten permission from me and I was sitting in the room with them it wouldn't have been a problem(things tend to mysteriously come up broken when she's alone). My mother does absolutely nothing about this! I'm at a loss, and it's getting to the point where I'm starting to resent my own mother. She lets her teenage(14) daughter run wild, but bites anyone's head off(particularly mine) when they try to talk to her about it. It's my game(I bought it), I have a right to demand it stay untouched at home, especially when there are a bunch of unsupervised delinquent children around!

Of course when my grand parents get wind of they they bawl my sister out, then the immediately storms out of the house slamming both doors and call my mother and tell her whatever twisted story she pleases because lets face it Michelle can do no wrong. Now this child has been out of school since January because she's been fighting with some other kids. That's her mother's excuse. I guess we(my grandparents and I) pester her enough so that she finally stops making excuses and registers her into another school(less tolerant than the last one), this all happens last week. She's been running the streets(hanging out where ever she wants, when ever she wants, with who ever she wants) for several months now. And she's showing obvious signs that she's forgetting whatever she was taught, not that she was a top student, she earned 4 or 5 F's last semester.

I'm really at a loss, I'm her eldest child, yet she still tries to keep me on a short leash. I can't disrespect her, she's my mother. Unlike my sister, I do respect my elders. However when I(or anyone) try to discuss my sister with my mother, she immediately dismisses us for whatever reason. Now she's uber religious, though sometime I feel she picks and chooses what she wants to follow(the bible does teach the importance of disciplining a child), that's all she wants to do. Read her bible, and watch the church channel. It's like she's completely not in touch with reality and her poor parents, who shouldn't have to worry about an unruly child have to deal with that monster she created. I just don't know what to do, it's so frustrating that it makes me break down in tears and I get so stressed that it makes me sick. I want a relationship with my mother, but this is just not working out. I'm well aware that I most likely will be her caretaker when she gets older and I don't want to resent her. I've been praying, and I know it's all in God's hands, but I'm afraid of my sister getting raped again, pregnant, or even killed out in the street with her so called "friends". My mother doesn't even take the time to meet her friends, or find out where they live/getting their number before letting her spend the night, or even checks to see if she's really going where she say she is(she lies a lot).

I believe my sister needs therapy, the has a lot of issues that have been left unchecked. We both had the same abusive father, but I went to therapy and came out better for it. She's had all of this bottled inside her. I figure that this lashing out may have something to do with it. I told my mom to get her into therapy when she fell victim to being raped, but still nothing. I don't want my sister to get taken away by social services, I'm beginning to suspect her previous school may start some kind of investigation, because she was never checked out of her previous school, she just stopped attending and with all of the stuff going on, I doubt whoever the case worker is will have a problem taking my sister away.

It bothers me, it bothers me so much I get sick and can't concentrate. I just don't know what to do, talking to her mother doesn't work, and talking to my sister doesn't work. My grandparent's don't deserved to be punished because their daughter can't control her unruly child.

So I just finished my second class last Friday, so far my GPA is a 3.0. So I'll need an 'A' in my next class, which is baking. Which should be pleasant since I really like baking and I'd love the chance to work with chocolate more.

This week I'm on my spring break and it's been relaxing so far. I got my tax refund, and it was basically done when I finished paying all of my bills, and picking up stuff from school. I'm left with about 50 dollars to get gas and maybe a snack with. I can't wait until I finish this program. Being broke is sucking majorly right now.

I have been working on my Dragon(well re-working it) and Husky fursuit, since I have nothing else to do but play video games, work on fursuits, and draw. I've also had the opportunity to work on my poaching technique, I'm getting better with layering on flavors with delicious results. Mmmm, salmon.

Next week I'll probably spend most of my time after school in the career office checking out the potential externships.

Just posting to show I'm still alive. I'm still enjoying my new job, it's not much in terms of money (80 bucks a week) but they're willing to work with my school schedule which is more than what I can say from the majority of retailers around here. I'm still in school, I just completed my first month(only 5 more to go). CSCA is pretty fun, it's a nice close knit community of teachers and students, not to mention the many companies that recruit prospects from the school. I'm really enjoying the smaller class sizes, there are 15 people in my class to it's a lot of 1 on 1 time with the instructor. While I haven't burnt anything to a crisp yet, I need to work on my time management skills. I want to have no regrets when I get my diploma and my new job with my prospective employer. At least I'll be able to pay off bills more effectively then. Anyway my goal is to graduate with a 3.4+ GPA and then I'll probably be heading over to an apprenticeship for about 6 mos. and I'll start taking classes for my BS in Business/Hospitality Management. So things are going well to say the least. Of course now I'll have to decide whether or not I want to stay in the country for my externship.

We used to buy frosty paws in the freezer section of the grocery store for Panzer. Then I got this recipe which he likes a lot better, tastes pretty good and is good for him.

32 oz. of vanilla yogurt, 2 tbs. peanut butter, 2 tbs. honey, and mashed banana. Mix together and then separate into freezer containers and freeze. You can sub. a lot of different fruits for the banana. We have done strawberries and cherries. Can also be used for Kong stuffing or in ice trays.

Well, I've been busy for the past few days. I'm enjoying the pet nutrition specialist position immensely. It's a very laid-back job, all I have to do is try to "convert" people to my pet food products. I've gotten to meet a variety of people, and their pets. It's a nice change from Wal*mart. I only work Saturday and Sunday, for 4 hours a day. The pay's pretty good at 12 bucks an hour so, at least I can afford to pay my bills. I'm currently going to school, and I'll be done with my diploma by this September. I'm already setting up contacts, so hopefully I'll have a job waiting for me right after I graduate.

I got the job! The interview when well, and my back ground in animal sciences certainly helped quite a bit. My orientation starts next Friday, which means I'll have some sort of income and I can start paying on things again. *dances* Yay for a none shady-like company, lol.

So the folks at the pet food company asked me for a second interview, which is scheduled for tomorrow. The company seems pretty awesome, and their not expecting me to shell out 140 bucks for a demo of the product I'd be selling. I'm preparing for it today so I'll have everything laid out tomorrow. Now to go print and fill out the application.

So, I have a job again! It's a pretty flexible part time job with Vector Sales. I'll be selling Cutco product(Knives, cooking utensils, etc..) for about 18 bucks per appointment, the job's not based on commission so it takes a lot of the pressure off. I'm still putting in applications and I have an interview tomorrow for a Pet Nutrition Specialist tomorrow. It pays 12 bucks an hour and I'd only be working 3-4 days a week, so it sounds pretty sweet.

Man, job hunting is brutal. I filled out about 10 applications today, we'll see if I get any word from anyone. I still have enough money to pay my bills for the next three months, but after then I'll be in a hole again. I'll be scheduling an interview next week. Wish me luck guys! I hope I hear from the other places I applied to. I'll be heading back to school next semester hopefully, unless my grandparents decide to move up their moving date. >.>

So, I'm jobless again, lol. At least this time, I'm jobless with a nice chunk of change coming my way. My first check barely covered gas let alone food. At least I'll actually be able to pay some stuff off or at least most of it off. I've been applying for jobs since I've started the temp position, and I'm just waiting for phone calls. I'll be hitting the street today, there are a couple of places in my area that are hiring and I'd like to hit them up. Thing are getting better, especially since I was able to get in good with the management up there, so hopefully that'll improve my chances at landing an entry level position there, if not it's back to retail. *sighs* But hey, it's better than nothing.

Well a temp one anyway, but it's nice having an income. I'll be making enough pay off my debts, fursuit, and have a little leftover to horde away. Hopefully they'll hire me as a permanent, but with all the crappy stuff that's been happening(My ride breaking down, me getting the flu, and them sending me home due to the flu) I'm not sure if they'll keep me. I do everything I'm supposed to so, show up at least 30 mins early, finish my work(and the work of some of the lazy permanent clerks >.>) so I hope they'll keep me. Just in case I'm going to start looking for something else. Things are finally feeling ok, though my grandparent's pushed up their move date to Feb, so I'm going to have to find a place of my own soon. It'll be better being on my own, I just can't seem to focus at my grandparent's house with all the chaos going on. Well, here's to hoping everything will turn out ok. *continues job hunting*
